• The grapes for this wine come from the Salento region in Puglia, the wine region that can best be described as the heel of the boot of Italy. The wine is made according to an old winemaking method in which the grapes are dried. In Italy, this is also called the Appassimento method, which is where this wine gets its name from. By drying the grapes, the grape loses about 50% of its moisture. This gives the wine a more concentrated taste and more depth. And it is also packaged in a beautiful bottle with a colorful label.
