Description
The Ume apricot, whose brine also provides the Ume Su vinegar, is grown in Japan and has a strong and slightly sour taste. It undergoes a lactic acid fermentation of about a month in sea salt brine, with Shiso leaves that give it a beautiful red color. In Umiboshi, the Ume is offered to you as a whole fruit, which can be cut into pieces; the Umeboshi-Past is exactly the same product, but in the form of a pulp that can be diluted.
