As the name slightly suggests, Pecorino Romano comes from the Lazio region. Pecorino is a corruption of the word 'pecora' which means sheep in Italian. This pasta sauce is made on the basis of a delicious 'soffritto' made from extra virgin olive oil and herbs. A soffrito is a mixture of chopped vegetables that are gently cooked in oil.
